Fano varieties are objects of fundamental importance in algebraic geometry. One variation of mirror symmetry posits a correspondence between smooth Fano varieties and certain special Laurent polynomials. This correspondence is conjecturally connected to the existence of toric degenerations of Fano varieties.

I will give an introduction to Fano varieties, and describe my own contributions relating toric degenerations to this correspondence.
